Keep bothering him until it's more convenient for him to pay you than it is to keep ignoring you. Threaten to report him to fair work if he does not pay you immediately and threaten to expose him online i.e. gumtree, craigslist, bad reviews, comments on all his advertising (yellow pages etc).
Don't let him get away with it, he has a business so he clearly has money to pay the workers wages, and if not, he shouldn't have hired them. Duh.
